99.9% of Spanish bananas are grown in the Canary Islands and harvested all year round. This project is based on the idea that to consume responsibly means to eat in seasonally but also to eat locally. In the peninsula, it can only be found in some plantations on the coast of Granada. It is a climacteric fruit, which means that it continues to ripen after it has been harvested. It is usually harvested before its point of maturity so that it does not arrive damaged at the store.
